Baked Doughnuts Recipe

This was the recipe I used for making the doughnuts. I got the recipe from Baking Mum. She has many recipes and I love visiting her blog.

I posting the recipe here for my own reference too :)

Ingredients

-1 cup plain/top/cake flour
- 1/4 cup sugar
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 150g plain yogurt
- 1 tbs canola oil
- 2 tsp lemon juice
- 1 tsp vanilla extract
- 2 tsp confectioner's sugar, divided

Methods

- in a small bowl, combine dry ingredients
- combine egg, yogurt, oil, lemon juice, and vanilla & mix well
- stir in dry ingredients just until moistened
- coat the tube pans with non stick cooking spray and dust with 1 tsp confectioners' sugar (I don't have the spray so I used a brush to coat it)
- spoon mixture into pan
- Baked at 200C for 1o-12 mins or until out clean toothpick inserted near center comes (I baked for 15 mins)
- Coo for 5 ins before removing from pans to wire rack
- Dust with remaining sugar

A Surprise

Being a "suaku", I have never tried Botak Jones's burger. We read abt it on Sunday Times and my friend suggested it too, we went to the Toa Payoh branch for dinner on Sunday. Crowds started coming in half hour after we arrived and there was a long queue to place order! The food came quite fast and the service crew were friendly, they came and asked if our food were served and how's everything.

The portion of the food was big! We ordered fish & chips and a side order sausage for LZ to share and I was glad we did that. They have 4 big slices of the breaded fish and with lots of chips! I ordered the famous Botak Jones burger with single patty and I can't finished it. They even have double patty and 3 patties! Daddy ordered 2 other dishes (fish burger and a sausage meal) and he finished it.. Wow! Verdict? The burger - not bad and not too dry, soup (1 type of soup only) - good, sausages - yummy, fish & chips - ok and chips - yummy. We don't mind going there again :)

So what's the surprise? Well, my very good friend bought me a bouquet of flowers(my favourite gerbera) and a cake! They celebrated my birthday in advance for me :) That was sooooo sweet! Thank you my friends :) Talking abt the flowers, daddy said my good friend "spoil market". Hahaha.... Don't worry daddy, I don't expect flowers from you :) Just be home early to be with me and our babies on that day.

LZ godparents bought new pets! It's hermit crabs, 2 of them. They bought it together with a very nicely done up container and it cost $100+. It has colourful sands, a few small cute shells and some decorative items. I forgot to take a picture of it... Godma told me it is easy to take care of them and they don't need to wash the container except changing the sands. LZ asked me if they can get one too.... Huh? We already have a dog and a terrapin and a family to take care of. They pleaded with me and I told them I would consider.... I think soon we will have a mini zoo...

Ah Ma Is 75!

It was another family gathering this evening and LZ looked forward to it! Before we meet up with the rest of the family members, LZ & me went to buy the birthday cake. I couldn't decide which one to buy (too many choices) and so I leave it to LZ to choose one for their dear grandma :) They chose a fruit cake.

We were late coz daddy was working and we waited for him as I do not know where was the restaurant. The only thing I knew was it was in ITE! I didn't know they have a Chinese restaurant in a school :) Food was so-so but the company... GREAT! Except that 10 of our family members were not with us, they were either working, overseas or preparing for exams. Nevertheless, Ah Ma was very happy to see many of us there :)

The younger generation was seated at the other table except LZ. Throughout dinner, L kept turning around to look at gorgors & jiejies. I knew she wanted to seat with them.... But the table was full, I told her maybe next time she can, when she is older.

M&M's cookies


Yes :) Another baking session! LZ have been asking for their M&M's cookies for quite some time.... Since daddy will be working today, we will be home till evening and they have finished their works, we baked their favourite!

We baked this instead of the chocolate ones. The recipe is slightly different....

Ingredients:
- 1 cup butter
- 1/2 cup granulated sugar (I used less)
- 1/2 cup firmly packed light brown sugar (I used less)
- 1 large eggs
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 340g M&M's
- 3/4 cup chopped nuts (optional)

Methods
- preheat oven 350F/180C
- Cream sugars & butter till light and fluffy
- beat in egg and vanilla
- in a bowl, combine flour, baking soda, salt. Then blend into cream mixture
- stir in M&M's
- drop a tbs apart onto ungreased cookie sheets
- bake 10 - 13 mins or until edge brown & center still soft
- cool 1 min on cookie sheet, then cool on wire rack.

LZdaddy's Birthday

Daddy took time off to spend it with us :) After sending LZ to school, we went to east coast beach for a stroll (so romantic hor... ) and had drinks & finger food @ The Beach Hut. I must say that the service was good. Next time we will go there for dinner :) Hopefully the food is as good.

It was a twosome time but I can't get LZ off my mind :) I told daddy "wished LZ were here", "LZ would love it here!", "next time we bring them here for dinner" blah blah blah.... Sorry.... After the short date, I insisted daddy go see doctor first as he was having cough. I rushed home to put on the icing for the cake. Time passed so fast! Soon it was time for us to pick LZ up from school. After picking LZ, we went home to cut the birthday cake.

I baked the cake in the middle of the night. By the time I finished baking and clearing up, it was already 5am! It was my first time baking a birthday cake and I was glad that it turn out good (LZfamily said that). LZ were very excited! L asked me to teach her and I would probably get them involved next year :) Daddy was very touched... He said this is the first time he had someone baking him a birthday cake :) LZ put the candles, we sang birthday songs and took some pics. After resting for awhile, we sent LZ for their lessons.

LZ gave a birthday gift to daddy, which was done by me. A month ago, while we were shopping, L saw the folding stars and said she wanted to fold it for daddy. We even bought a nice little bottle to put the stars. Then 2 weeks back, we took it out and I tried teaching both of them. It was a failure, it was not easy for them.... They have a hard time trying to fold it and they fold it too tight. In the end, I folded all the stars (in a few days)! It was my first attempt doing it too :) They did help though... Putting the stars into the bottle! Hahaha..... And daddy thought they folded it!

In the evening, we went to one of our favourite restaurants for dinner. L doesn't look that good by then and it was late. We went home and soon LZ fell asleep. At 11+pm, I went in to check on LZ, and I realised L was having fever! We quickly woke her up and fed her medicine. An hour later, her fever subsided.... Phew!

L's Chinese Mini Concert

We received L's Chinese progress report (all As) and this time I asked teacher how was her behaviour in class. Teacher Li told me that L is a very helpful girl (she always helps teacher stack up the chairs after lesson) and she can't sit throughout the lesson.... This is what I am concern abt... She also said she has to constantly tells her to sit down quietly during class. I wonder if she is bored with the lesson....

She is very active child since baby and I am worried when she goes to primary school, will she be able to sit throughout lessons? I talked to her principal & teachers from school and they said she is active but when it is time for her to be quiet, she will be.

Today during the mini concert, she wasn't very keen to perform, hence I recorded only a small part of it. Probably she did it too many times... It is so different from her school concert rehearsal (upcoming concert). Principal was full of praise of her and said she is a performer. Anyway, she is interested in Chinese coz while at home, she tries to speak to me in mandarin. She also knows that she is weak in hanyupinyin and told me to do it more frequent with her. I will have to see how is her next performance or behaviour in class. Then I will decide what to do...

LZ's Drawing

LZ drew these last weekend. They love drawing especially lately. L teaches didi how to draw... Sometimes while I was busy in the kitchen, I can hear them laughing what they have drew. They also 'fight' to tell me what tickle them. But it is not always peace and quiet when they draw.... They will complain to me who takes who's colour pencils or who copy who's work :)

L loves to draw me, houses and animals. Z, he loves drawing cars and sometimes he draws me too but I rather he doesn't coz I look so ugly in his drawing. Hehehe.... Nevertheless I loves what they drew for us. I keep their drawings. I must remember to write down the date though.... So when they are older and look back at these pictures, we will have a good laugh what they drew at what age :)

My First....

Daddy's birthday is on 25th Oct! It will be my first time baking a birthday cake! Let's hope the cake will turn out ok :) I am in the kitchen now, getting ready to bake the cake first. Tomorrow I will decorate it :)

I had to use another recipe coz I forgot that I have run out of plain flour! Agrhhhhhh.....

Fun @The Pool

Sometimes when L goes for her swimming lesson, Z will have fun in the pool. Why sometimes? If I am too tired after cooking dinner and rushing for the lesson (he has his dinner @ the pool), I will tell him no and most of the time he is ok with it. We usually go earlier so that both of them can have fun together before L's lesson starts.


This evening, we went earlier again. It is a joy to watch them play :) They chased after each other, pretending to be a shark and splashing into the water. I told L to take care of Z and play with him while in the pool and she did :)

Z remembered I told him beginning of this year that he will learn swimming when he turns 4. He tells me every now and then "mommy, you said I will learn swimming when I am 4." , "mommy, I am going to be 4 yr old in December" etc... How can I forget? :)

I am very blessed to have 2 wonderful kids and a loving husband :)

Heartache

L had a very bad bruise behind her left ear... She told me that she knocked didi's head while in godparent's car yesterday. It was very swollen.... When I applied zambak for her, she tensed up and trying her best not to cry. My heartache... Let's hope it will heal fast....

I have been constantly reminding L to be very careful but it doesn't help. She falls down or hurt herself very often.... It can be while walking to school, walking down the steps or even at home! Haiz... Sweetie, please be more careful... Mommy heartache whenever I see you hurt..

Sunday

We attended our long time friend's wedding lunch today and LZ's godparents babysit LZ. It was great to see our friends at the wedding as some of us have not seen each other for few years.


They stood up and sang the National Anthem as soon as they heard it from the video :)

I think godparents spoilt them :) Whenever they babysit LZ, they plan activities that they would enjoy. They went to Lorong Halus... Feed fishes and see puppies... And they had MacDonald! I bet it must be LZ asking for that coz they wanted to have the toys :) When we went to their house, Z was sleeping on the sofa and L was watching her graduation concert with godpa.

In the evening, we had dinner at Oasis @ Kallang. Godparents surprised daddy with a birthday cake! It was very sweet of them :) They will be working on his actual day and so they planned to celebrate his birthday earlier. Thank you, my dear friends :) We wanted to cut his cake at the restaurant but daddy refused, he was shy to cut the cake in the restaurant :) We cut the cake outside the indoor stadium. Hahaha.... This was the first time we did it like that! LZ enjoyed it! Anyway, it doesn't matter where we cut the cake, it was the company that matters :)

Quiet Saturday

A very quiet day @ home... So I baked donuts for LZ :) They love donuts, the chocolate ones... They have to eat it once every week, and I suspect they are donut addicts ;). This is healthier than what I bought for them, baked instead of fried ones :)

I don't really fancy it but LZdaddy and LZ love it, that's more important :) Daddy loves it with sugar and LZ love it with chocolates & lots of sprinklers. These are very small donuts.... For adult, you can pop the whole thing into your mouth.

This is not the first time he said this. Sometimes when he asked for me and I was busy, Jiejie went to him to see if he needed any help. He said the same thing to jiejie.

Z : Mommy!
Jiejie : Z, you need help?
Z : Are you mommy? I am calling for mommy....
Jiejie : Mommy is busy and I come and help you!

I wondered where he learnt that from.... We don't say that to each other..... :)

Visit To New School

This was L's first visit to her primary school. We were there to fill forms required by MOE & school and also a short 'interview' with a teacher. She was very excited for the past few days. As we were walking toward the school,

I asked L : Are you excited?
L : No....
I was worried for a moment, why is she not excited?
Me : Why?
L : Mommy, I am not excited but nervous (smile).
Me : Are you worried about meeting the teacher?
She nodded
Me: Don't worry Sweetie, she will ask you to read. You do it like what you did at home ok?
L: OK (smile)

When we went in, she was busy looking everywhere :) As we were last (by appointment), the school was very quiet. She was led into a room (with a teacher) as soon as we arrived. Then another staff explained to us what we need to fill in. Z was exploring the place while we were doing that. Less than 10 mins, L was back with us. I asked her how was the 'interview' and she told me she read out words from a paper.

Then we went to get her school uniforms. When she tried on the uniform, I took some pics of her.
The auntie (who sell uniform) said : 第一个孩子?
Me: 对呀! 你怎么知道? I asked silly question
Auntie: 哎呀! 每个妈妈的第一个孩子都是这样的。 都说auntie等一下,让我拍照。

I don't want to miss it of coz! This was her very first time wearing her primary school uniform. Auntie is wrong about one thing, I am very sure I will take pic of Z when it is his turn :) Anyway, the skirt was too long (almost to her ankle). L laughed and I did too :) The auntie said we were supposed to alter it to 2cm below knee. I have to keep that in mind.... I will have it alter at a later date, so that it will fit her when school starts.

I think she likes her new school environment :) , though she never says it.

Safety

There is one of the things that we don't compromise : Road Safety. Since baby, LZ have been sitting on their baby/car seats unless we are in other car/taxi. If we pass by other cars and they noticed that the kids are not in their car seats, they say "Look! Their daddy mommy never put them on the car seats! So dangerous! ". L remembered the road safety tour that we went last year :)

I called our previous car a 'selfish' car (now we have a 7 seater car). Yes, no doubt with a car/booster seats, you can't have extra passenger or more spacious, but think of it.... Our children safety is important. I'm glad that my LZ know that so they never have problem sitting on their booster seats :)

When we cross the roads, we use the pedestrian crossing (law abiding citizens. Hehehe.... ). Let me confess, when I am alone, sometimes I don't use it (so I'm don't follow law. Hahaha....) .

My Niece

Congrats! Sam& Jac :)

My little niece, Clare chose a right time to be born, 10-10-2007. What a nice munber! Little Clare is my cousin, Sam & Jac 's first child :) I went to visit them today(while LZ were in school) and it has been some time since I carried a newborn. The feeling is great!

Bonding With LZdaddy

Since beginning of this year, LZdaddy had been making effort to spend more time with LZ. Not that he hasn't been spending time with them :) He makes effort to come home early, help me to shower them, tuck them to bed if he comes home early, read them bedtime stories every night(if he is in town), etc....

Sometimes, LZ do things with daddy, things that they don't do it with me. They like to tickle each other's feet. Funny right? They feel ticklish but yet they like daddy to tickle them :) Another thing that they like to do is guessing game. They would 'draw' on daddy's back, tell him what alphabet it starts with and daddy would try to guess it. They play this every other day :) I like to see them playing this game as it helps Z improves on his phonics. They also like to talk abt Transformers. Yes L likes to talk abt that too :) Sometimes, when daddy calls home, they ask which transformer is calling and they will also tell him who they are (which transformer).

I appreciate daddy helping me out whenever he can. It gives me some time to rest and to catch my shows :) Thank you daddy and I love you very much :) I know sometimes you are very tired but you insist on doing things for me so that I can rest. Marrying you is one of the best things that happen to me :)

Look! I'm Driving!

Instead of spending $$$$ at the arcade, daddy decided to get one of this :) He bought it quite some time back but only fixed it up recently....

There was preparation before LZ get to play it. See the pics and you know what I mean :) Think we have to find another way coz every time Z steps on the accelerator, he will slide down. Daddy had to sit on the floor to hold onto the cushion. L seems comfortable with it. They had lots of fun playing that and me too! Hehehe....

However, they can only play this on weekends. Seems like we will be stuck at home for the next few weekends :)

What Happen When You.....

This is what happened when you touch an IRON.... I was ironing clothes and I have warned him not to touch it. When I came out from the toilet (I went to take some water to top up the iron), I saw him holding his hand. I sensed something was wrong.... I asked him if he touched the iron and he kept quiet. I opened up his hand and I saw the redness on his finger. My heart ache.... Instead of scolding him, I put his finger under running water and then put cream for him.

I hope he (& jiejie) has learnt his lesson and I'm sure he will not touch it anymore (I hope)... This happen in the morning before his concert. He insisted that I put a plaster for him and I did.

Nursery Annual Concert - Z

My boy had his 1st concert and we were so excited! He has been singing the songs at home and I am impressed that he can remember the lyrics. This was also the 1st time he put on makeup! Eeeeeee.... I can't stand putting makeup for him! So funny to see my boy with makeup.... I can't stop laughing..... I thought I had applied enough makeup for him but teacher put on more for him....

We rushed to pick L from school to go over to the nursery section. L was excited too and when she saw her brother with makeup, she can't stop laughing! I must say that L was very well behaved throughout the concert, unlike some kids I saw running around the hall and standing on the chairs during performance.

It was not as crowded as the Graduation concert coz it there was only 6 classes performing (afternoon classes). The concert began with the Principal giving a speech, followed by a Christmas play by N2. Z was a Shepherd, and he was holding on to a lamb when performing. So cute! I remembered teacher told me once that he fell asleep during rehearsal. The Principal & teacher 'threaten' him, saying if he fall asleep in class again, he will not be the shepherd. It worked! Hahaha.... Z is honoured to be selected as one of the shepherd :)

Thereafter, the N1 class performed. The little ones are so cute and they are only 2 1/2 yrs old to 3yrs old. Then the N2 classes took turns to perform... Z wore a Hawaiian shirt and white short for his performance and I can't stop smiling when I saw him on stage :) I was glad that we were able to move to the front to video it. While daddy & me were doing that, L took care of my handbag. There was a blackout midway through his performance and they had to do it again..... But the kids were not affected by it :) For the finale, all the N2 children came out and did a medley of English & Chinese songs. By then, we saw the kids were very tired...

Overall, the little ones did a great job, bearing in mind they are only 2 1/2 to 4 1/2 yrs old. I asked Z if he enjoyed it, he said he did :) After the concert, we rushed to send L for her ballet lesson...

Growing Up

When L was a baby/toddler, she was very fussy with her food. She was not keen to try out new food when we were out and it always took me a long time to convince her. When we were out eating, she would eat plain white rice or I have to prepare home cooked food. I think people might have thought that I was ill-treating my girl (when they see her eating plain rice). My family or friends would laugh abt it. I felt lousy.... But I never give up cooking different kinds of food, ordering different dishes for her to try and I have never force her. I know one day she would enjoy different kind of food.

Slowly, she began to enjoy it. I think partly due to her brother. Z, unlike L, loves to eat. She enjoys what I cooked and if I cook a new dish, she is willing to eat it and always give my positive comments. She used to dislike ketchup or anything cook with tomato sauce but now, she would ask for it as a dipping sauce or ask if I can cook pasta with tomato sauce. Whenever we go to Swensen or any western food restaurants, she would ask if they serve spaghetti bolognaise. :)

Last Friday (28th Sep), we had dinner at our favourite Japanese Restaurant. I ordered a set hamachi (yellowtail) sushi and when they served it, she asked "mommy, is this sushi?" . I told her that is raw fish sushi and if she like to try it. She said yes.... I thought she would spit it out as soon as she had the 1st bite but I was wrong! She gobbled down the whole thing and asked for 2nd piece! Then I asked her if she like me to order another set she said "YES!". This is the 1st time she had raw fish and she love it! I am sooooo HAPPY!

One of the food she likes since young is vegetables. I never have problem getting her to eat veggies, especially the leafy ones. I am always the proud mommy whenever we eat out with our friends and their kids. They asked how did I get my girl to eat veggies :) She likes lettuce too. When we have salad, she would have it without dressing (very healthy right?) and she have it with another of her favourites, cucumber :)

My sweetie... I hope you know mommy loves you very much and I am always so proud of you.

Waiting Day

Yesterday, LZ celebrated Children's Day @ Church. L enjoyed playing games at the different game stalls set up by the church members while Z enjoyed the food. He rather eat than to play games :)

Today we went to collect their passports, we changed it to the biometric passports. Gosh! There were at least 400 people ahead of us! We waited 2 and half hours! I was so glad daddy was with us. We planned to bring them out for a good lunch but we can't so we had lunch at the foodcourt at the Immigration Building. The food was horrible! What did LZ did while waiting? Playing their gameboy :) I thought we would be able to catch a movie but it was late by the time we collected their passports (L has swimming lesson). Sorry babies....
